This is an unparalleled era to engage with nutrition-focused programs and studies. Our department spans the full spectrum of nutritional science, from school meal programs and urban gardens to cutting-edge research on nutrition's role in cancer, obesity, immune function, and human development. We actively seek and support graduate applicants from all cultural and academic backgrounds.
Our graduate curriculum integrates biochemical, molecular biology, and clinical studies, with specialization options including: cellular mechanisms of nutrient function, nutrition-disease relationships, nutritional biochemistry, pediatric and behavioral nutrition, dietary requirements and health evaluation, as well as nutrition's impact on cancer, obesity, aging, and immunity. The master's program equips graduates for community college instruction, public health leadership, and technical roles in food and pharmaceutical industries.
Nutritional science examines how organisms utilize food for survival and development. This universal relevance drives our department's commitment to diversity and inclusion. Through optimal nutrition practices, we aim to enhance global quality of life by preventing disease and promoting longevity. Our department excels in interdisciplinary research areas such as Nutrition and Cancer, Metabolic Health, Maternal/Child Nutrition, and Nutrigenomics. As a bridge between health sciences at UT, our faculty bring expertise in nutrition science, metabolism, immunology, molecular biology, and related biomedical fields.
Our academic offerings include two accredited dietetics programs and research-focused curricula for all degree levels. Students gain practical experience through internships, community outreach, and the UT Nutrition Institute (UTNI). Through cross-disciplinary collaboration and innovative applications of our research, the Department of Nutritional Sciences contributes to the University's mission of improving health outcomes locally and globally.
