Candidates should hold a Bachelor of Science in food technology, food science, or another relevant scientific discipline. Specialization in specific commodities (such as meats, dairy, produce, or baked goods) can be achieved through strategic course selection and research focus. Those pursuing the thesis track develop skills to conduct high-quality research in their chosen specialization. Alongside coursework, completing an original thesis under a faculty advisor's guidance is mandatory to earn a thesis-based MS degree.
For students not inclined toward thesis work or deemed unsuitable by their advisory committee, non-thesis alternatives (project-based or coursework-only with exam) exist. These pathways maintain the same credit-hour requirements as the thesis option.
