Take on the Culinary Challenge Are you passionate about food, with a creative flair and strong work ethic? Laney College's Culinary Baking and Pastry Program equips you for entry-level baking positions, whether as a baker, pastry chef/owner, food industry innovator, or as preparation for further education at a four-year institution. Our program combines classroom instruction with hands-on kitchen training. The Baking and Pastry AS Degree or Certificate of Achievement provides essential industry skills, covering safety protocols, leadership, mathematics, food science, and operational effectiveness.
Program Learning Objectives
Execute proper food safety and sanitation procedures when working with baking equipment.
Master core baking and pastry methods and their applications across diverse traditional and modern desserts, breads, cakes, confections, and plated presentations.
Understand and follow recipes precisely, assessing final products based on components, cost, technique, timing, visual appeal, consistency, and taste.
