NDSU's Food Safety education initiative launched in 2001 to address growing demands for food safety specialists across government, industry, and academic sectors. The program brings together graduate faculty from various colleges at NDSU, offering diverse expertise in microbiology, communication, public health, nutrition, and plant sciences. With today's increasingly interconnected and sophisticated food networks, public health experts must actively collaborate with consumers and food sector professionals - from farmers to food service workers. Key objectives include tracking and preventing foodborne illnesses, implementing critical regulations, and educating communities about proper food handling. These goals are pursued through cutting-edge approaches in molecular microbiology, biotechnology, risk analysis, hygiene standards, food safety legislation, and surveillance systems. The MPH degree with a Food Safety concentration at NDSU equips students with essential competencies to serve as crucial protectors of public health and food supply integrity. The program offers customizable coursework, allowing students to select at least two electives aligned with their career aspirations. Potential focus areas encompass disease identification, food system contamination prevention, health policy development, and crisis management for emerging food safety risks. All these specialized studies complement the MPH core curriculum and food safety concentration requirements.
