The University of Memphis MS Nutrition and Dietetic Internship and Residency Program offers a rigorous 16-month curriculum that must be completed within this timeframe. Starting in mid-August of the first year, the program combines coursework and supervised practice until the conclusion of the second year's fall semester. This 42-credit-hour program emphasizes clinical rotation preparation, with students taking 9-12 credit hours each during the initial fall and spring semesters. An optional 20-hour-per-week graduate assistantship (GA) in clinical research, healthcare, or management settings may be available.

The supervised practice component (internship/rotations) centers on adult clinical nutrition while incorporating pediatric, community, and management rotations across various Memphis healthcare facilities. Optional thesis/project work commences in the first fall semester, though some sites mandate research participation. Students not pursuing a thesis/project must complete three clinical nutrition research credit hours. Rotations begin in late May/early June following the first academic year, continuing through summer and the second fall semester with 40 weekly rotation hours plus about four class hours. After 28 weeks, participants accumulate roughly 1200 supervised practice hours, earning a Verification Statement that qualifies them for the registered dietitian/nutritionist (RDN) credentialing exam. Thesis/project defenses occur during the second fall semester, while non-thesis students take a comprehensive exit exam.
