The Department of Nutritional Sciences and Toxicology (NST) provides three undergraduate major specializations: Physiology and Metabolism, Dietetics, and Toxicology, all culminating in a Bachelor of Science (BS) degree.
This is a particularly dynamic period to study nutrition and toxicology sciences. Media coverage has brought attention to numerous dietary questions regarding development and aging, genetically modified food safety, connections between diet, cancer, and chronic illnesses, as well as worldwide malnutrition challenges.
Shaped by NST faculty research, the curriculum explores diverse subjects ranging from nutrient functions and mechanisms to chemical agent risks and benefits, cultural and socioeconomic influences on diets, plus initiatives and policies aimed at improving human and environmental health.
