The Culinary Nutrition bachelor's degree program expands upon Johnson & Wales' legacy of excellence in culinary education by incorporating comprehensive nutrition studies. Starting with foundational training in culinary arts or baking and pastry, the curriculum progressively integrates nutrition science and culinary techniques. Graduates are equipped for diverse roles in food service management, sports nutrition, healthcare dining, and other fields requiring culinary expertise combined with nutritional knowledge.
Program graduates will demonstrate the ability to: Design menus following current dietary recommendations, Utilize scientific principles when developing and managing specialized meal plans, Maintain food safety protocols throughout service operations, Manage food service budgets effectively, and Develop wellness initiatives for various community settings.
The curriculum covers nutritional concepts for all life stages, examining conventional, alternative, and therapeutic dietary approaches. Students practice creating flavorful, nutritionally balanced dishes that meet modern dietary standards. Instruction comes from both certified chefs and registered dietitians, providing professional perspectives in culinary nutrition.
Complementary coursework in business management and liberal arts enhances the culinary and nutrition training. The program concludes with an advanced culinary nutrition internship, offering hands-on experience in the student's chosen specialization.
