Our studies examine how dietary habits influence obesity risk and chronic illnesses like non-alcoholic fatty liver disease, heart disease, and cancer. These multifaceted health issues are challenging to manage and have become more widespread as inactive routines and diets high in calories but low in essential nutrients fuel an obesity epidemic across industrialized nations.
Using advanced molecular and cellular biology methods, we analyze how nutrients impact cellular operations and metabolic processes across different biological scales. Our work explores the connections between nutrition and disease at the microscopic level, seeking to uncover diet-disease relationships and create approaches for producing more wholesome, nutrient-rich food options globally.
