Welcome to the University of Nebraska-Lincoln's meat science research team. Our cutting-edge facilities rank among the nation's finest. The program encompasses teaching, research, and outreach initiatives spanning all aspects of meat science. Key focus areas include food safety outreach, HACCP training, youth education programs, and academic courses covering animal products fundamentals, meat grading, fresh and processed meats, plus industry study tours.
