The Department of Dairy and Food Science offers graduate research programs for both Master's and Doctoral degrees. South Dakota State University stands among only two U.S. institutions featuring a Dairy Science Program with specialized tracks in Dairy Production and Manufacturing. The department boasts cutting-edge laboratories and a modern dairy processing facility capable of producing fluid milk, cheese, butter, ice cream, concentrated/dried products, and more. Additionally, it operates a dedicated dairy research and training center housing 300 Holstein and Brown Swiss cattle for educational and research purposes. Students have access to metabolic/surgical facilities in the Animal Science Complex, specialized equipment in the Genomics Lab, and resources across collaborating departments like Veterinary and Biomedical Sciences and Health and Nutritional Sciences.
Student Learning Outcomes
Display comprehensive understanding of dairy science (manufacturing or production) equivalent to Ph.D. level expertise.
Develop strong communication abilities, encompassing dissertation/journal writing, oral/poster presentations, and grant proposal composition.
Acquire research competency for scientific investigation and critical evaluation of existing literature.
