Master the craft of making artisan breads, exquisite plated desserts, decorative cakes, and delectable pastries. Delve into European classics including tarts, mousses, truffles, and petit fours. Hone your skills in cake decoration artistry. Experience chocolate craftsmanship through demonstrations of sugar pulling, blowing, detailed decorating, and showpiece creation. The curriculum combines classroom theory with practical training for serving baked goods in our on-campus restaurants and pastry shop.
Sustainability principles are woven throughout the program, particularly in food preservation and cheesemaking courses. Gain insights into seasonal purchasing, local sourcing, preserving summer harvests, and supporting regional dairy producers.
