The school provides graduate education culminating in a Master of Science degree in Nutritional Sciences. The curriculum encompasses studies in nutrition and food science. Thesis projects may involve research with human participants or laboratory animals. Faculty research focuses on: child, elderly, and minority group nutrition, cholesterol metabolism and energy regulation, human lactation influences, body composition and weight management, sports performance and physical conditioning, as well as human milk analysis and food quality preservation.

SDSU's research facilities, including animal labs and specialized equipment, support investigations overseen by nutritional sciences faculty. Students may also pursue studies at off-campus locations through partnerships between university faculty and San Diego-area research institutions.
Graduates holding an M.S. in Nutritional Sciences find careers as nutrition program directors, community nutrition specialists, food service managers, college instructors, and hold research, administrative, or quality assurance roles in both public and private sectors.

Graduate applicants with international coursework are required to submit transcripts (academic) and proof of degree (diploma/degree certificate) both in the original-language and an English translation, from all post-secondary schools attended, to Graduate Admissions. Transcripts/grade reports are required from all post-secondary schools attended. The student must have earned at least 30 units of coursework listed on the official program of study with a minimum grade point average of 3.0. Review the graduate requirements by Country web page for country-specific information. Failure to submit the required country-specific documents listed will result in your application being canceled. Official transcripts have been received indicating English as the principal language of instruction. All graduate and post-baccalaureate applicants (regardless of citizenship status) applying to SDSU from an international institution where the medium of instruction was not English must submit one of the following as proof of English proficiency:
TOEFL minimum score of 80 iBT, 550 PBT. IELTS overall score of 6.5 or higher.
