The interdisciplinary Master of Science in food science program provides multiple specialization options for students. Research focus areas:
Examining nutritional compounds in novel crop varieties such as peppers, sage, and oregano, while creating comprehensive systems for cultivation, harvest, post-harvest management, and processing
Extracting capsaicinoids from pepper varieties
Isolating and applying thujone/camphor from sage and thymol/carvacrol from oregano
Studying pecan opalescence causes and developing prevention methods
Advancing x-ray applications for non-invasive pecan quality assessment
Automating watermelon harvesting for lycopene extraction
