The food studies doctoral program provides a multidisciplinary exploration of food systems. Drawing from humanities and social science methodologies, this PhD equips graduates for academic teaching and research, as well as roles beyond university settings. With guidance from an advisor and doctoral committee, students customize their coursework and dissertation around specialized research topics. Current scholarly investigations examine areas including: How hospital environments shape perceptions of food and wellness, The interplay between culinary traditions, cultural identity, and social dynamics, Migration-related food practices, ethnic eateries, street food culture, and issues of authority and cultural diversity, Economic impacts of policies and corporate initiatives addressing food system sustainability challenges, The cultural dimensions of globalized food markets, particularly regarding regional and heritage foods, Historical perspectives on migration, activism, racial constructs, farm labor, and workforce dynamics within U.S. food production, Connections between government policies and public health outcomes, particularly nutrition and physical activity initiatives
