The Master of Science in Food Safety and Technology program equips students to become food safety specialists for private companies, federal agencies, and state health departments. Participants develop practical expertise in food microbiology, packaging, chemistry, analysis, human nutrition, and regulatory standards. Graduates are ready to join the food safety field or advance to doctoral studies in food science.

An exclusive partnership between Illinois Tech and the U.S. Food and Drug Administration, based at Illinois Tech's Moffett Campus, offers master's students specialized research collaboration with FDA experts. Thesis projects give students valuable hands-on experience evaluating novel food safety methods and exploring diet-health relationships in our clinical nutrition research facility. These investigations enhance knowledge of food safety science, nutrition, and wellness, potentially shaping policy decisions by the FDA and other regulatory bodies.
