Our studies examine how dietary habits influence obesity risks and chronic illnesses like non-alcoholic fatty liver disease, heart conditions, and cancer. These multifaceted health issues are challenging to manage, with rising occurrence rates as inactive lifestyles and high-calorie, low-nutrient diets fuel obesity epidemics across industrialized nations.

Using advanced molecular and cellular biology methods, we analyze how nutrients impact cellular operations and metabolic processes across different biological scales. Our work explores nutrient-disease connections at the microscopic level to uncover dietary influences on health, while developing approaches to promote more wholesome, nutrient-rich food options globally.
