This diploma program delivers specialized culinary and pastry instruction along with leadership training for career advancement in the culinary field.
Enrolled students register as SkilledTradesBC apprentices, earning work hours while completing their technical training.
The program begins with VIU's Culinary Arts Certificate, featuring 28 weeks of Professional Cook 1, 14 weeks of Professional Cook 2, and 300 hours of paid work experience. Students also earn a globally recognized Bronze Certification in Japanese Cooking through CIVI's partnership with Japan's government.
After completing Year 1, students receive the Culinary Arts Certificate before advancing to Year 2. Some applicants may need additional high school courses.
Year 2 enhances first-year fundamentals with advanced culinary and pastry techniques, including artisan baking in a wood-fired oven. Hospitality department instructors teach crucial management, accounting, and beverage courses.
Upon finishing the diploma and completing SkilledTradesBC's required work hours, graduates qualify for the Red Seal exam.
