Vancouver Island University's Baking and Pastry Arts Diploma (BPAM) equips students with comprehensive bakery training and management expertise, positioning graduates for success in the baking industry. When starting the program, students receive a SkilledTradesBC Trade Worker ID Number. During their first year, they earn technical training credits toward their apprenticeship while accumulating practical work hours through paid industry placements. After completing the diploma, graduates can register as apprentices with an employer sponsor and work toward obtaining their SkilledTradesBC Baker Certificate of Qualification with Red Seal certification.
This program develops professionals for baking careers, management roles, and business ownership. As an intensive full-time cohort program, BPAM blends practical baking instruction with essential management theory. By incorporating modern baking trends and contemporary curriculum, the program enhances students' technical abilities while cultivating leadership, communication, HR knowledge, business strategy, and financial skills - creating versatile graduates who meet industry needs.
First-year BPAM students master fundamental and specialized techniques for yeast products, pastries, sugar work, chocolate, and wedding cakes, including training with a wood-fired brick oven. The initial year concludes with a ten-week industry internship.
Second-year instruction focuses on advanced skills for baking industry leadership. Across two semesters, students take specialized pastry courses, learn culinary fundamentals, develop and operate a pop-up bakery, and complete management coursework through VIU's Hospitality Management Department. The BPAM diploma grants advanced standing for students pursuing VIU's Bachelor of Hospitality Management degree.
