Throughout this program, you'll examine both regional and global food movements while cultivating multifaceted competencies via our integrated approach of cooperative placements, practical labs, and coursework. Study core culinary principles and hone critical knife handling, safety, and hygiene practices through chilled food production and pastry work. Enhance your basic training, accumulate real-world experience, and strengthen teamwork abilities while catering to patrons in our Short Order Lab. Secure industry exposure by undertaking a cooperative position with one of our affiliated eateries. Opt to exit with a certificate or progress to diploma studies. Further perfect traditional cooking methods and challenge yourself with modern menu creations at Jane's, RRC Polytech's premier dining venue. Conclude your exploration of contemporary gastronomy while continuing to refine your craft, serving diners, and accumulating professional experience at Jane's. Expand your practical knowledge, connect with prospective employers, grow your industry contacts, and complete a culminating cooperative assignment. Earn your diploma upon completion.
Regular Admission Requirements
Grade 12
Submit proof of graduation from or enrolment in Grade 12, including one credit in each of the following:
Grade 12 English
Grade 12 Math
If you provide proof of enrolment at time of application, your official final grades indicating successful completion must be submitted by July 15 for fall enrolment or by the deadline specified in your admission letter
Mature Student Admission Requirements
If you are 19 years of age or older and have been out of high school for a minimum of one year at time of application, and you do not meet the regular admission requirements, you may apply under the Mature Student admission requirements.

High school graduation is not required, but you must have successfully completed or be enrolled in:
