The Department of Nutritional Sciences and Toxicology provides three undergraduate major specializations: Physiology and Metabolism, Dietetics, and Toxicology, all culminating in a Bachelor of Science (BS) degree.

This is a particularly dynamic period to study nutrition and toxicology sciences. Media coverage has brought attention to numerous dietary-related issues, including food's impact on growth and aging, safety concerns around genetically modified foods, connections between nutrition and chronic illnesses, and worldwide malnutrition challenges.

Our curriculum, shaped by NST faculty research, explores diverse subjects ranging from nutrient functions and mechanisms to chemical substance risks, cultural and economic influences on diets, plus initiatives and policies promoting human and environmental wellbeing.
