Our studies explore the complete value chain of functional biopolymers (including polysaccharides, proteins, and polynucleotides), encompassing their extraction, refinement, chemical and enzymatic alteration, comprehensive structural analysis, and the creation of innovative applications in food products, cosmetics, as well as sophisticated biomaterials for medical treatments and biosensing technologies. Since numerous biopolymers originate from food processing byproducts, we actively seek partnerships with food and biotechnology sectors. These substances serve multiple purposes in food systems, and understanding how their molecular structures relate to biological activities forms a key focus of our investigations.
