Meat cutting is a specialized, high-demand trade with excellent employment prospects after graduation. Career paths range from retail and wholesale butchery to industrial meat processing, poultry preparation, ham cutting, meat trimming, and beyond.
This intensive one-year Ontario College Certificate program takes place at Fanshawe's London Downtown Campus, featuring cutting-edge facilities with modern equipment. You'll develop expertise in meat processing, packaging, safety protocols, and customer service under the guidance of seasoned butchery professionals. Over 50% of the curriculum involves hands-on training, including operating an on-campus retail meat shop to practice real-world skills.
Professional Butchery Techniques delivers thorough theoretical knowledge and practical training for success in the expanding meat processing sector. Students collaborate with industry experts to master contemporary meat cutting methods, specializing in trimming, deboning, carcass preparation, and meat processing. The program also covers product packaging and marketing strategies for meat sales.
Graduates can pursue the Retail Meat Cutter 245R Apprenticeship or opt for dual certification by continuing into the Culinary Skills program.
Ontario Secondary School Diploma (OSSD), or equivalent, or mature applicant with the following course:
- Grade 12 English (C or U)
Students who do not meet the admission requirements are recommended for academic upgrading. A conditional offer may be possible with proof of enrolment.
